The marinade is what makes this chicken so good, and it’s super-versatile. In addition to serving over salad as in the recipe below, the chicken can also be grilled on skewers or sauteed and served as cutlets. Serves 2.
Ingredients
1/2 lb skinless boneless chicken breast, cubed
2 cloves garlic, minced
juice of 1/4 lemon
3 Tbsp olive oil
1 Tbsp red wine vinegar
1/2 tsp oregano
1/2 tsp salt
1/2 tsp pepper
Romaine lettuce, chopped
1/2 cup feta cheese, crumbled
1 Roma tomato, chopped
Kalamata olives, sliced (optional)
1 Cucumber, peeled and sliced (optional)

Instructions
Mix together garlic, lemon juice, olive oil, red wine vinegar, oregano, salt, and pepper for marinade. Reserve half for salad dressing.
Add marinade to chicken pieces and let rest for 5-10 minutes.
Saute over medium heat until chicken is cooked through, 5-10 minutes.
While chicken is cooking, toss together Romaine, tomato, olives, cucumber, croutons, and reserved salad dressing.
Top with feta cheese and sauteed chicken.
